Easter is on it’s way! Nothing like the last minute for me….I mean Easter is this weekend. But, I made this super easy Easter Dessert and I’m not kidding, it tastes AMAZING. I’ll run down all the items I used and there’s a quick TikTok video I made showing exactly how I did it too. Read below for a fun, family (or friends!) activity that results in yummy Easter dessert. My husband loved them and I ate a million trying out my techniques. The flavor is on point!

What You’ll Need

Cookies (I bought Trader Joe’s Thin Lemon Cookies)

Cake Frosting (I used Pillsbury Vanilla)

Large Marshmallows

Small Marshmallows

Sanding Sugar (really fine sprinkles) – Any color(s)

Additional Sprinkles (optional)

Water

Knife, Bowls, Baking Paper

How To Make Your Easy Easter Dessert

  • First step is to prep. Cut your large marshmallows in half, put some water in a cup, grab all your supplies, put your sanding sugar in a bowl
  • Get your marshmallows ready first. Put your finger in the water and stamp the water onto the uncut side of your marshmallows. Then stamp your marshmallow into the sanding sugar. It sticks really easy with the water and leaves less of a mess. Now you have little bunny paws!

  • Melt your cake frosting. This step can be intimidating, but don’t let it be! It’s going to take about 15-30 seconds depending on how much frosting you use. I used about a third of the jar and microwaved it for 20 seconds. If your frosting is too thick, just pop it in for a little longer. If it’s too runny, let it sit for a few minutes, it will start to thicken again. Maybe you are like me, and it takes a while to get your technique down, and your frosting hardens, you can pop it in the microwave again!
  • Dip your cookies into the frosting. Cover most of the way on both sides. Place the dipped cookie onto a baking sheet. It’s probably a good idea to give your baking sheet a spray, otherwise, you’ll end up using a knife to separate the cookie from the paper like I did.
  • While the frosting is still warm, place the bunny feet onto the cookie, then add a small marshmallow for the tail.
  • Use some cookies and sprinkles to add variety (if you want).
  • Place the cookies in the freezer for about 10 min to harden them up and stop the icing from travelling onto the paper.

To Make the Marshmallow “Easter Eggs”

  • These came about because I had extra cake and marshmallows. Cut your large marshmallows in half.
  • Dip the uncut side into the melted cake frosting.
  • Dip the frosted side into the sanding sugar.
  • This covers the whole one side of the marshmallow and it’s sugary goodness.
  • Add to the plate with your cookies.
